Directions
  1. Season the chicken by sprinkling kosher salt, paprika, dried oregano, and ground black pepper over the chicken breasts.
  2. Sear the chicken in olive oil until browned, about 5-7 minutes per side.
  3. Sauté shallots, carrots, celery, and minced garlic until tender, about 5-6 minutes.
  4. Deglaze with chicken stock and add cannellini beans, stirring to combine.
  5. Nestle seared chicken into the pot and simmer for 15 minutes.
  6. Shred the chicken into bite-sized pieces and return to the pot.
  7. Stir in chopped basil, spinach, and lemon juice, adjusting seasoning if needed.
  8. Serve warm, garnishing with additional basil if desired.
