  • 0.5 cup granulated sugar adjust based on fruit tartness
  • 0.25 cup water for jam consistency
  • 2 tablespoons cornstarch to thicken jam
Tart Crust
  • 1.75 cups all-purpose plain flour plus extra for dusting
  • 125 g vegan block butter at room temperature
  • 0.33 cup powdered sugar for sweetness
  • 3 tablespoons cold water to combine dough

Method
 

Preparation
  1. Combine raspberries, sugar, and water in a saucepan. Mix well to ensure all ingredients are combined.
  2. Cook the mixture over medium heat, mashing the berries until the jam thickens (about 5-10 minutes).
  3. Mix flour, vegan butter, and powdered sugar in a bowl until a dough forms.
  4. Adjust dough consistency with water or flour as needed.
  5. Preheat your oven to 350°F (180°C) and grease your tart tins.
  6. Roll out the dough on a floured surface and cut into circles. Press into tart molds.
  7. Fill each tart with jam and bake for 20 minutes until golden brown.
  8. Cool the tarts on a wire rack before serving.
