Ingredients

For the Cookies
  • 3 cups all-purpose flour a must-have for the perfect cookie texture.
  • 1 tablespoon baking soda helps the cookies rise beautifully.
  • 1 teaspoon cream of tartar stabilizes egg whites for that perfect fluffiness.
  • 1 cup unsalted sweet cream butter, softened for a rich, buttery flavor.
  • 1.5 cups powdered sugar creates the ideal sweetness for the cookies.
  • 1 large egg, room temperature helps in achieving a smoother batter.
  • 2 teaspoons vanilla extract, divided adds aromatic sweetness to every bite.
For the Icing
  • 0.25 teaspoon cream of tartar ensures the egg whites whip up perfectly.
  • 2 cups powdered sugar (for icing) sweetens and thickens the icing nicely.
For Decoration
  • 1 container pink sanding sugar adds a sparkly touch.
  • 2 cups strawberry preserves provides a fruity filling.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and cream of tartar in a large bowl and set aside.
  3. Cream the butter and powdered sugar together in a mixing bowl. Then add the egg and 1 teaspoon of vanilla extract until fluffy.
  4. Gradually add the flour mixture to the butter mixture until fully combined. The dough should be smooth and slightly tacky.
  5. Roll out the dough on a floured surface to 1/4-inch thickness and cut out heart shapes.
  6. Bake the cookies for about 15 minutes or until the edges are lightly golden. Let them cool on a wire rack.
  7. Mix the icing ingredients—egg whites, cream of tartar, and powdered sugar—until stiff peaks form.
  8. Decorate the cooled cookies by outlining and filling them with the icing. Sprinkle with pink sanding sugar.
  9. Assemble the sandwich cookies with a generous dollop of strawberry preserves in between!

For the perfect Valentine Sandwich Cookies, make sure your butter is softened to room temperature. Avoid overmixing the dough once you combine the wet and dry ingredients to keep the cookies tender and light.
