Preparation
- Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and cream of tartar in a large bowl and set aside.
- Cream the butter and powdered sugar together in a mixing bowl. Then add the egg and 1 teaspoon of vanilla extract until fluffy.
- Gradually add the flour mixture to the butter mixture until fully combined. The dough should be smooth and slightly tacky.
- Roll out the dough on a floured surface to 1/4-inch thickness and cut out heart shapes.
- Bake the cookies for about 15 minutes or until the edges are lightly golden. Let them cool on a wire rack.
- Mix the icing ingredients—egg whites, cream of tartar, and powdered sugar—until stiff peaks form.
- Decorate the cooled cookies by outlining and filling them with the icing. Sprinkle with pink sanding sugar.
- Assemble the sandwich cookies with a generous dollop of strawberry preserves in between!
