  • 1 cup Farmer's cheese or ricotta, well-drained
  • 2 large Eggs
  • 2 tablespoons Vegetable oil for frying
  • 2 tablespoons Granulated sugar
  • 1 cup All-purpose flour plus extra for dusting
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
For Serving
  • 1 tablespoon Icing sugar for dusting
  • Fresh fruits or syrup optional toppings

Cooking Instructions
  1. In a mixing bowl, combine farmer’s cheese, eggs, sugar, vegetable oil, flour, baking powder, and vanilla extract. Blend until smooth and creamy, ensuring there are no lumps.
  2. Lightly dust a clean surface with flour. Take small portions of the mixture and shape them into about 14 patties, roughly 1 inch thick, ensuring they hold together nicely.
  3. In a frying pan, heat vegetable oil over medium heat. Make sure the oil is hot enough to fry the patties without soaking them, ideally reaching a shimmering surface.
  4. Place a few patties at a time in the pan, frying until they are golden brown, about 2-3 minutes per side. Flip carefully to maintain their shape and cook evenly.
  5. Once golden and delicious, remove the Syrniki from the pan and let them cool slightly. Serve them dusted with icing sugar and add your favorite toppings.
