Preparation Steps
  1. Preheat your smoker or grill to 225°F (107°C).
  2. Mix the rub ingredients in a bowl and generously rub this mixture all over the brisket.
  3. Wrap the seasoned brisket in plastic wrap and refrigerate for at least one hour or overnight.
  4. Place the brisket fat side up on the grill grate. Add wood chips for smoking and close the lid.
  5. Smoke the brisket for about one hour per pound; check the internal temperature to reach 195°F (90°C).
  6. Remove the brisket from the grill and let it rest in aluminum foil for at least one hour before slicing.
