  • 8 ounces Cream cheese or Greek yogurt
For Vegetables
  • 1 cup Carrots chopped
  • 1 cup Corn can be frozen, fresh, or canned
  • 1 cup Peas
For the Base
  • 4 cups Chicken broth homemade or store-bought
  • 2 cups Long-grain white rice
For Topping
  • 2 cups Shredded cheddar cheese or mix in other cheeses

How to Make Slow Cooker Cheesy Chicken and Rice
  1. Combine all ingredients: In your slow cooker, layer the chicken pieces, garlic powder, onion powder, salt, black pepper, cream cheese, carrots, chicken broth, and rice. Gently stir to mix everything well.
  2. Cover and Cook: Close the lid and set your slow cooker to high. Let it cook for about 3-4 hours, or until the rice is fluffy and the chicken is fully cooked.
  3. Stir in Veggies: After the cooking time, open the lid and stir in the peas, corn, and shredded cheddar cheese. Mix well to ensure the cheese melts.
  4. Melt the Cheese: Cover the slow cooker again and switch it to warm for about 15 minutes to allow the cheese to melt.
