Ingredients
  

For the Ceviche
  • 1.5 pounds Cooked shrimp Peeled and deveined
  • 2 pieces Tomatoes Diced, seeds removed
  • 1 cup Cucumbers Diced, Persian or English
  • 1/3 cup Red onion Diced finely
  • 1 piece Jalapeño Finely diced, seeds and vein removed
  • 1 piece Avocado Peeled and diced
  • 1/2 cup Cilantro leaves Chopped
For the Citrus Marinade
  • 1/4 cup Fresh squeezed orange juice
  • 1/4 cup Fresh squeezed lime juice
  • 1/4 cup Fresh squeezed lemon juice
  • Salt To taste
  • Freshly ground black pepper To taste
  • Hot sauce Optional, to taste

Method
 

Preparation Steps
  1. Cut the cooked shrimp into bite-sized pieces and place them into a large mixing bowl.
  2. Toss in the diced tomatoes, cucumbers, red onion, jalapeño, avocado, and cilantro.
  3. In a separate container, whisk together the fresh squeezed orange juice, lime juice, and lemon juice.
  4. Pour the citrus marinade over the shrimp and vegetable mix, then season with salt and freshly ground black pepper.
  5. Let the ceviche sit for a few moments to meld the flavors before serving.
