For the Noodles
  • 8 oz Udon brown rice noodles Gluten-free option
  • 8 oz Pad thai noodles Alternative for flavor
  • 8 oz Spaghetti or angel hair pasta Substitutes if needed
For the Salad
  • 2 cups Cooked and shredded chicken Can substitute with tofu
  • 1 medium Red bell pepper Or use yellow or orange peppers
  • 1 cup Sugar snap peas Snap off the ends
  • 1 medium Carrot Julienned or shredded
  • 1 cup Persian cucumbers Can replace with any cucumber
  • 2 tablespoons Green onions Or substitute with chives
  • 1/4 cup Cilantro leaves Can substitute with parsley
  • 2 tablespoons Sesame seeds Lightly toasted for extra flavor
For the Vinaigrette
  • 1/4 cup Sesame oil Main dressing ingredient
  • 3 tablespoons Soy sauce Use low-sodium if preferred
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Honey Use maple syrup for vegan
  • 2 cloves Garlic Fresh or roasted garlic

Method
 

Instructions
  1. Whisk the Vinaigrette: Combine sesame oil, soy sauce, rice vinegar, honey, and garlic in a bowl. Whisk until blended and set aside.
  2. Cook the Noodles: Prepare the udon noodles according to the package instructions. Rinse under cold water and drain well.
  3. Combine Ingredients: In a large bowl, mix the cooked noodles, chicken, red bell pepper, sugar snap peas, carrot, cucumbers, and cilantro.
  4. Drizzle and Toss: Pour the vinaigrette over the salad and toss gently to coat all ingredients.
  5. Season and Serve: Add salt and pepper to taste. Serve immediately or refrigerate for 30 minutes.
