  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Buttermilk
  • 1 large Egg
  • 2 tablespoons Melted butter
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Vegetable oil can swap with coconut oil
Frying
  • 1 tablespoon Butter
Optional Toppings
  • 1 tablespoon Powdered sugar
  • 1/4 cup Maple syrup
  • 1 cup Fresh berries
  • 1/2 cup Whipped cream

Method
 

Preparation
  1. In a large bowl, whisk the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  2. In a medium bowl, combine the wet ingredients: buttermilk, egg, melted butter, and vanilla extract. Stir gently until blended.
  3. Add the wet ingredients to the dry mixture. Stir gently, leaving some lumps.
  4. While the batter rests, heat a skillet over medium heat. Add a combination of butter and oil.
  5. Pour in the batter in small portions, cooking until bubbles form on the surface—about 2-3 minutes.
  6. Using a spatula, gently scramble the cooked pancakes into bite-sized pieces until golden.
  7. Plate your scrambled pancakes and top them with your favorite toppings.
