How to Make Roasted Marinara Sauce
- Preheat your oven to 400°F (200°C).
- Spread the quartered Roma tomatoes on a baking sheet. Drizzle with 1 tablespoon of olive oil, then season with salt and black pepper.
- Roast the tomatoes for 30-35 minutes until golden and slightly charred.
- Heat 2 tablespoons of olive oil in a pot over medium heat. Cook the diced onions for about 5-7 minutes until translucent.
- Caramelize the onions by reducing the heat and cooking slowly for approximately 20 minutes.
- Add the minced garlic to the pot and sauté for 2-3 minutes until fragrant.
- Combine the roasted tomatoes with the caramelized onions. Blend the mixture until smooth.
- Stir in the sugar, fresh basil, bay leaves, onion powder, baking soda, and balsamic vinegar into the blended sauce.
- Simmer the sauce for 20-30 minutes over low heat, tasting and adjusting seasoning as needed.
