How to Make Roast Potatoes
- Start by peeling the potatoes and cutting them into evenly sized chunks, about 1½ to 2 inches each.
- Place the cut potatoes in a pot of cold salted water and bring it to a boil. Simmer for 7–10 minutes until slightly tender.
- Carefully drain the potatoes in a colander, then give them a gentle shake to roughen the edges.
- Preheat the oven to 425°F (220°C). Pour your chosen fat into a baking tray and let it heat for 5–7 minutes.
- Add the drained potatoes to the hot fat in the baking tray. Turn them carefully to coat all sides.
- Roast the potatoes for 45–50 minutes, turning once halfway through until golden brown and crisp.
- Season the roast potatoes with sea salt, freshly ground black pepper, and any optional herbs before serving.
