Method
 

How to Make Roast Potatoes
  1. Start by peeling the potatoes and cutting them into evenly sized chunks, about 1½ to 2 inches each.
  2. Place the cut potatoes in a pot of cold salted water and bring it to a boil. Simmer for 7–10 minutes until slightly tender.
  3. Carefully drain the potatoes in a colander, then give them a gentle shake to roughen the edges.
  4. Preheat the oven to 425°F (220°C). Pour your chosen fat into a baking tray and let it heat for 5–7 minutes.
  5. Add the drained potatoes to the hot fat in the baking tray. Turn them carefully to coat all sides.
  6. Roast the potatoes for 45–50 minutes, turning once halfway through until golden brown and crisp.
  7. Season the roast potatoes with sea salt, freshly ground black pepper, and any optional herbs before serving.
