Preparation
- Preheat your oven to 425°F.
- Combine hot water, sugar, and cream of tartar in a saucepan. Bring to a light boil and let it cook for 1 minute.
- Remove from heat and add lemon juice. Fold in the quartered Ritz crackers gently, and let the mixture sit for 2 minutes.
- Pour the cracker mixture into your unbaked pie crust. Sprinkle with ground cinnamon and place the small butter pieces on top.
- Mix the crushed Ritz crackers, brown sugar, and cinnamon with melted butter in a bowl.
- Sprinkle the cracker topping over the filling in the pie crust. Bake for 30–35 minutes.
- Cool the pie completely before serving.
