How to Make Rigatoni Bolognese
  1. Heat olive oil in a large skillet over medium heat.

  3. Add ground beef and pork to the pan. Brown the meat evenly, about 8-10 minutes.
  4. Stir in tomato paste and cook for 1-2 minutes.
  5. Combine crushed tomatoes, whole milk, nutmeg, salt, and pepper in the skillet.
  6. Simmer the sauce uncovered for 45 minutes to 1 hour on low heat.
  7. Boil a large pot of salted water. Cook rigatoni according to package instructions, usually about 10-12 minutes.
  8. Reserve a cup of pasta water before draining the rigatoni.
  9. Mix rigatoni with the sauce, adding reserved pasta water as needed.
  10. Serve warm with a generous sprinkle of grated Parmesan and fresh herbs.
