How to Make Red Velvet Sandwich Cookies
  1. Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper.
  2. Combine the red velvet cake mix, eggs, melted butter, and 2 teaspoons of vanilla extract in a large bowl.
  3. Mix until smooth and well combined.
  4. Roll the dough into small balls and coat each ball in powdered sugar before placing them on the prepared baking sheet.
  5. Bake in the preheated oven for 7-9 minutes, until the cookies are slightly spread and cracked.
