How to Make Pomegranate Christmas Salad
  1. Wash the mixed greens thoroughly. Place them in a large serving bowl to create a fresh, crisp base for your salad. Allow them to dry completely.
  2. Slice the apple into thin pieces and toss them in lemon juice immediately. Slice the avocado and crumble blue cheese if needed.
  3. Candy the walnuts by placing them in a small skillet over medium heat. Add brown sugar and stir constantly for about 3–4 minutes until caramelized. Let cool on parchment.
  4. Mix the vinaigrette by combining balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper in a jar. Shake or whisk until emulsified and smooth.
  5. Assemble your salad by layering the greens, pomegranate seeds, apple slices, avocado, crumbled blue cheese, and the candied walnuts.
