How to Make Pinwheel Cookies
- In a large bowl, cream the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
- Stir in the eggs and pure vanilla extract, mixing until everything is smooth and well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and kosher salt.
- Gradually mix the dry ingredients into the wet mixture using a spatula or wooden spoon.
- Divide the dough in half. Color one half with red food coloring and the other with pink.
- Place each dough half between two sheets of parchment paper and roll them out into rectangles, about 1/4-inch thick.
- Refrigerate the rolled dough layers for about 30 minutes.
- Once chilled, stack the red dough on top of the pink one and carefully roll it into a log.
- Roll the log in Valentine’s Day sprinkles, wrap it in plastic wrap, and chill again for another 30 minutes.
- Preheat the oven to 325°F. Slice the log into 1/4-inch thick cookies and arrange them on a baking sheet.
- Bake for 10-15 minutes until the edges are just golden.
