Method
 

How to Make Pinwheel Cookies
  1. In a large bowl, cream the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
  2. Stir in the eggs and pure vanilla extract, mixing until everything is smooth and well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and kosher salt.
  4. Gradually mix the dry ingredients into the wet mixture using a spatula or wooden spoon.
  5. Divide the dough in half. Color one half with red food coloring and the other with pink.
  6. Place each dough half between two sheets of parchment paper and roll them out into rectangles, about 1/4-inch thick.
  7. Refrigerate the rolled dough layers for about 30 minutes.
  8. Once chilled, stack the red dough on top of the pink one and carefully roll it into a log.
  9. Roll the log in Valentine’s Day sprinkles, wrap it in plastic wrap, and chill again for another 30 minutes.
  10. Preheat the oven to 325°F. Slice the log into 1/4-inch thick cookies and arrange them on a baking sheet.
  11. Bake for 10-15 minutes until the edges are just golden.
