Ingredients
  

Base
  • 2 tablespoons Olive oil
  • 1 pound Ground beef or turkey
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon Crushed red pepper flakes optional
Sauce
  • 2 tablespoons Tomato paste
  • 28 ounces Crushed tomatoes
  • 4 cups Low-sodium chicken broth or vegetable broth
Soup
  • 8 ounces Lasagna noodles broken into pieces
  • 1 cup Ricotta cheese or cottage cheese
  • 1 cup Shredded mozzarella cheese for topping
  • 1/2 cup Grated Parmesan cheese
  • 2 cups Fresh spinach or kale
  • 1/4 cup Fresh basil or parsley for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add diced onion and sauté for about 4 minutes until translucent. Stir in minced garlic and cook for an additional minute.
  3. Sprinkle in salt, black pepper, Italian seasoning, and crushed red pepper flakes. Mix in tomato paste and cook for 2 minutes.
  4. Pour in crushed tomatoes and chicken broth. Bring to a simmer and let flavors meld for about 5 minutes.
  5. Add broken lasagna noodles. Stir well and let simmer for 12-15 minutes until noodles are tender, stirring occasionally.
  6. Reduce heat and stir in ricotta, shredded mozzarella, and grated Parmesan cheese. Add fresh spinach or kale and cook until wilted, about 2-3 minutes.
  7. Taste and adjust seasonings as needed. Serve hot, garnished with extra cheese and fresh herbs.
