  • 2 lbs Ground beef can substitute with ground turkey or chicken
  • 1 Onion chopped; yellow or sweet onions work well
  • 1 Green bell pepper diced; can swap with any sweet pepper
  • 1 Tomato diced; canned tomatoes work as substitute
  • 1 Egg can use a flaxseed egg for vegan option
  • 2 cloves Garlic minced; garlic powder can be used
  • 1 cup Seasoned bread crumbs crushed crackers or oatmeal can work
  • 8 oz Muenster cheese can substitute with cheddar or mozzarella
For the Topping
  • 2 cups Mashed potatoes homemade or prepared Idahoan mashed potatoes
  • 1 cup Shredded cheddar cheese optional mix of cheeses for flavor variety

Method
 

How to Make Mom's Meatloaf
  1. Preheat the oven to 350°F (175°C) and lightly grease a baking pan.
  2. Combine the ground beef, chopped onion, diced bell pepper, diced tomato, egg, minced garlic, and seasoned bread crumbs in a large bowl.
  3. Press half of the meat mixture into the prepared baking pan, creating a base layer.
  4. Layer the Muenster cheese slices evenly over the meat base.
  5. Add the remaining meat mixture on top, pressing gently to form an even layer.
  6. Spread the prepared mashed potatoes over the top of the meatloaf cake.
  7. Sprinkle shredded cheddar cheese over the mashed potatoes.
  8. Bake for 45–55 minutes, or until the meat is fully cooked and the cheese is melted and golden.
  9. Let the meatloaf cake rest for 5–10 minutes before slicing and serving.
