How to Make Mini Valentine Cheesecakes
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
  2. Pulse Oreo cookies and melted butter in a food processor until you have fine crumbs.
  3. Press the crumb mixture firmly into the bottom of each cupcake liner to form the crust.
  4. Beat together the softened cream cheese and sugar with a mixer until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Mix in red food coloring until you achieve your desired pink shade.
  7. Fill each cupcake liner generously with the cream cheese mixture.
  8. Bake for 15-17 minutes, until the centers jiggle just a bit.
  9. Cool completely at room temperature, then refrigerate for about 2 hours until firm.
