How to Make Mini Valentine Cheesecakes
- Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
- Pulse Oreo cookies and melted butter in a food processor until you have fine crumbs.
- Press the crumb mixture firmly into the bottom of each cupcake liner to form the crust.
- Beat together the softened cream cheese and sugar with a mixer until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Mix in red food coloring until you achieve your desired pink shade.
- Fill each cupcake liner generously with the cream cheese mixture.
- Bake for 15-17 minutes, until the centers jiggle just a bit.
- Cool completely at room temperature, then refrigerate for about 2 hours until firm.
- Top with whipped cream and sprinkle Valentine’s decorations just before serving.
