How to Make Light Funfetti Angel Food Cake
  1. Preheat oven to 350°F (175°C). No need to grease the tube pan.
  2. Sift together cake flour and half of the granulated sugar (3/4 cup) twice.
  3. Beat egg whites using a mixer on medium speed until foamy. Add cream of tartar and salt.
  4. Gradually add the remaining 3/4 cup sugar while beating egg whites until stiff, glossy peaks form.
  5. Gently fold in vanilla and optional almond extract into the egg whites.
  6. Sift the flour mixture over the egg whites in three batches, folding gently each time.
  7. Carefully fold in rainbow jimmies, avoiding color bleeding.
  8. Spoon the batter into the prepared tube pan, smoothing the top.
  9. Bake in the oven for 35-40 minutes, or until golden brown and springs back when touched.
  10. Cool upside down in the pan to prevent collapsing.
