How to Make Light Funfetti Angel Food Cake
- Preheat oven to 350°F (175°C). No need to grease the tube pan.
- Sift together cake flour and half of the granulated sugar (3/4 cup) twice.
- Beat egg whites using a mixer on medium speed until foamy. Add cream of tartar and salt.
- Gradually add the remaining 3/4 cup sugar while beating egg whites until stiff, glossy peaks form.
- Gently fold in vanilla and optional almond extract into the egg whites.
- Sift the flour mixture over the egg whites in three batches, folding gently each time.
- Carefully fold in rainbow jimmies, avoiding color bleeding.
- Spoon the batter into the prepared tube pan, smoothing the top.
- Bake in the oven for 35-40 minutes, or until golden brown and springs back when touched.
- Cool upside down in the pan to prevent collapsing.
- Frost with whipped topping and garnish with rainbow sprinkles.
