Ingredients
  

For the Cake
  • 1 cup granulated sugar
  • 1/2 cup salted butter softened
  • 1 whole large egg
  • 2 large large egg whites
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup maraschino cherry juice
  • 1 cup full-fat sour cream
  • 1/2 cup whole milk room temperature
  • 1 cup chopped maraschino cherries
For the Frosting
  • 1/2 cup salted butter softened
  • 1/2 cup vegetable shortening
  • 4 cups powdered sugar
  • 2 tablespoons maraschino cherry juice
For Decoration
  • 6 pieces additional maraschino cherries with stems

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare three 8-inch round cake pans by greasing them.
  2. Cream together softened butter and granulated sugar in a mixing bowl until light and fluffy, about 3-5 minutes.
  3. Incorporate the large egg, egg whites, and vanilla extract. Mix until fully combined and smooth.
  4. Add half of the all-purpose flour along with the baking powder. Mix gently until just combined.
  5. Blend in the sour cream and maraschino cherry juice until smooth.
  6. Fold in the remaining flour, then mix in the whole milk until cohesive.
  7. Gently fold in the chopped maraschino cherries.
  8. Divide the batter evenly between the prepared pans and bake for 24-26 minutes. Cool on a wire rack.
Frosting and Decoration
  1. Whip together the softened butter and vegetable shortening until smooth and creamy.
  2. Gradually add powdered sugar and cherry juice to the frosting while mixing until creamy.
  3. Level the cooled cake layers, frost between the layers, then frost the top and sides.
  4. Decorate your cake with additional maraschino cherries on top.
