  1. Trim the chicken breasts by removing any visible fat and pound each piece to an even thickness.
  2. Season both sides of the chicken generously with salt and pepper.
  3. Combine the marinade ingredients: mix olive oil, lemon juice, minced garlic, shallot, and thyme in a bowl.
  4. Marinate the chicken by pouring the marinade over it and refrigerate for at least 1 hour.
  5. Preheat your grill to medium-high heat, about 400°F.
  6. Grill the marinated chicken for about 8-10 minutes on each side, or until they reach an internal temperature of 165°F.
  7. Let the chicken rest for 5 minutes after grilling before serving.
