How to Make Crispy Sweet Potato Stacks
- Preheat your oven to 400°F (200°C).
- Spray a 12-cup muffin tin lightly with cooking spray.
- Whisk together melted butter, garlic powder, kosher salt, and black pepper in a large bowl.
- Stir in the grated Parmesan and finely shredded Gruyere cheese.
- Toss the sweet potato slices in the butter-cheese mixture until they are thoroughly coated.
- Layer the coated sweet potato slices into each muffin cup, stacking them high.
- Cover the muffin tin with aluminum foil and bake for 30 minutes.
