  • ½ cup Parmesan cheese grated
  • ¼ cup Gruyere cheese finely shredded
For the Sweet Potatoes
  • 5 medium Sweet potatoes peeled and sliced into ⅛-inch thick rounds

How to Make Crispy Sweet Potato Stacks
  1. Preheat your oven to 400°F (200°C).
  2. Spray a 12-cup muffin tin lightly with cooking spray.
  3. Whisk together melted butter, garlic powder, kosher salt, and black pepper in a large bowl.
  4. Stir in the grated Parmesan and finely shredded Gruyere cheese.
  5. Toss the sweet potato slices in the butter-cheese mixture until they are thoroughly coated.
  6. Layer the coated sweet potato slices into each muffin cup, stacking them high.
  7. Cover the muffin tin with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake uncovered for another 30-35 minutes, until the tops are golden brown and crispy.
  9. Cool for 5 minutes, then carefully loosen with a butter knife and serve warm.
