Preparation Steps
  1. Begin with 3 cups of cooked chicken breast, shredded or diced. If using raw chicken, boil or bake for about 20-25 minutes at 375°F before shredding.
  2. In a medium bowl, combine the crushed Ritz crackers with 1/2 cup of melted butter until evenly coated.
  3. In a very large bowl, mix softened cream cheese, sour cream, and mayonnaise until smooth.
  4. Stir in sliced green onions, garlic powder, and add salt and pepper to taste, mixing well.
  5. Gently fold shredded chicken into the creamy mixture until coated.
  6. Preheat oven to 350°F. Lightly grease a 9x13 inch baking dish. Spread half of the creamy chicken mixture into the dish and top with 1 cup of shredded cheddar cheese.
  7. Spoon the remaining chicken mixture over the cheese and sprinkle the rest of the cheddar cheese on top. Scatter buttery Ritz cracker crumbs evenly on top and gently press down.
  8. Bake for 30-40 minutes until hot and bubbly with a golden cracker topping. Tent with foil if needed to prevent over-browning.
  9. Allow casserole to rest for 10-15 minutes before serving to help flavors meld.
