Ingredients
  

For the Soup Base
  • 8 slices Bacon Cooked until crispy
  • 1 cup Onion Chopped small
  • 2 medium Carrots Peeled and chopped small
  • 2 stalks Celery Chopped small
  • 3 cloves Garlic Minced
  • 0.5 teaspoon Italian seasoning
For the Creamy Mixture
  • 2 tablespoons Flour
  • 4 cups Chicken broth
  • 1 cup Heavy or whipping cream
For the Veggies and Protein
  • 4 medium Russet potatoes Peeled and diced
  • 0.75 cup Corn Frozen or fresh
  • 2 cups Cooked rotisserie chicken
Seasoning
  • Salt & pepper Add to taste

Method
 

Directions
  1. Cook the bacon strips in a large pot over medium heat until crispy, about 5-7 minutes. Remove and drain excess fat.
  2. Add the chopped onion, carrots, and celery to the pot. Sauté for about 5 minutes until tender.
  3. Add garlic and Italian seasoning, and cook for another minute.
  4. Sprinkle flour into the pot, stir well, and cook for one minute.
  5. Gradually add chicken broth while stirring. Bring to a gentle simmer.
  6. Stir in heavy cream, diced potatoes, and corn. Bring to a boil, then reduce to a simmer.
  7. Simmer for approximately 15 minutes, or until potatoes are tender.
  8. Add cooked chicken and crumbled bacon back into the pot. Cook for an additional 5 minutes.
  9. Season with salt and pepper to taste.
