Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Lightly grease a pie plate with butter or non-stick spray.
  2. Sauté the vegetables by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper; cook for 5-7 minutes.
  3. Whisk together the cottage cheese, large eggs, and milk in a large mixing bowl until smooth.
  4. Season the mixture with garlic powder and Italian seasoning.
  5. Fold in the sautéed onion, bell pepper, chopped spinach, and cheddar cheese.
  6. Pour the quiche mixture into the prepared pie plate and bake for 45 to 60 minutes.
  7. Cool for at least 15-20 minutes before slicing.
