  • 1/3 cup Real Maple Syrup
  • 1 teaspoon Vanilla Extract
  • Zest of 1 large Orange

  • 1 cup Sliced Almonds
  • 1 teaspoon Mixed Spice
For the Extras
  • 1/2 cup Unshelled Pistachios
  • 1 cup Dried Cranberries

Method
 

How to Make Christmas Granola
  1. Preheat the oven to 325°F (162°C) and line a baking sheet with parchment paper.
  2. Combine the melted coconut oil, maple syrup, brown sugar, vanilla extract, mixed spice, and orange zest in a mixing bowl. Whisk together until everything is beautifully blended.
  3. Mix the rolled oats, sliced almonds, and mixed spice in a large bowl. Drizzle the wet mixture over the dry ingredients and stir until evenly coated.
  4. Spread the mixture onto the prepared baking sheet. Press down firmly to form an even layer.
  5. Bake for 20 minutes, add chopped pistachios, and continue baking for another 10 minutes until golden brown.
  6. Cool for one hour on the baking sheet. Once cooled, fold in the dried cranberries and break into chunks.
