  • 2 tbsp Maple sugar For dusting

Method
 

How to Make Chocolate Pancakes
  1. Mix flaxseed meal and water in a small bowl, let it sit for 10 minutes.
  2. Combine plant milk and apple cider vinegar in another bowl, rest for 5 minutes.
  3. Warm almond butter in the microwave until it's pourable.
  4. Whisk together oat flour, gluten-free flour, cocoa powder, baking soda, baking powder, and sea salt in a large mixing bowl.
  5. Add flax egg, vegan buttermilk, maple sugar, vanilla extract, and warm almond butter to dry ingredients, mix until smooth.
  6. Allow batter to rest for a few minutes.
  7. Preheat a non-stick skillet over medium heat, pour about ¼ cup of batter to form a pancake.
  8. Cook until edges firm up, then flip and cook until golden brown, about 1-2 minutes.
  9. Keep warm in a 200°F oven until all pancakes are cooked.
  10. Blend maple sugar with cornstarch for a light topping.
