Ingredients
  

For the Sauce
  • 1 lb ground chicken a lighter alternative to beef
  • 1 tablespoon extra-virgin olive oil for sautéing
  • 1 medium yellow onion, finely diced creates a sweet base

  • 8 oz baby bella or cremini mushrooms, finely diced adds umami
  • 4 large garlic cloves, minced aromatic punch
  • 1 teaspoon salt balances flavors
  • ½ teaspoon black pepper adds warmth
  • 1 can (28 oz) crushed tomatoes foundation of the sauce
  • 3 tablespoons tomato paste intensifies tomato flavor
  • 1 cup low-sodium chicken broth or bone broth provides moisture
  • 3 tablespoons fresh basil, finely chopped burst of freshness
  • 1 tablespoon butter finishing touch of richness
For the Pasta
  • 16 oz pasta of choice perfect canvas for the sauce

Method
 

Cooking Instructions
  1. Heat the oil in a large pot over medium-high heat until shimmering.
  2. Sauté the onion, carrot, mushrooms, and garlic together until they soften and turn golden, about 5-7 minutes.
  3. Add the ground chicken, breaking it apart as you cook until browned and fully cooked through, roughly 5-7 minutes.
  4. Stir in the crushed tomatoes, tomato paste, chicken broth, basil, bay leaves, salt, and pepper. Allow to simmer for 30 minutes.
  5. Cook your pasta according to package instructions. Reserve a bit of the pasta cooking water before draining.
  6. Remove the bay leaves and combine the pasta with the sauce in the pot, adding a splash of reserved water if needed.
  7. Garnish with fresh basil and a sprinkle of Parmesan cheese before serving.
