- Heat the oil in a large pot over medium-high heat until shimmering.
- Sauté the onion, carrot, mushrooms, and garlic together until they soften and turn golden, about 5-7 minutes.
- Add the ground chicken, breaking it apart as you cook until browned and fully cooked through, roughly 5-7 minutes.
- Stir in the crushed tomatoes, tomato paste, chicken broth, basil, bay leaves, salt, and pepper. Allow to simmer for 30 minutes.
- Cook your pasta according to package instructions. Reserve a bit of the pasta cooking water before draining.
- Remove the bay leaves and combine the pasta with the sauce in the pot, adding a splash of reserved water if needed.
- Garnish with fresh basil and a sprinkle of Parmesan cheese before serving.
