How to Make Chewy Oatmeal Raisin Chocolate Chip Cookies
  1. In a bowl, combine gluten-free all-purpose flour, oat flour, baking soda, and ground cinnamon. Whisk until well blended.
  2. In a separate bowl, beat together the unsalted butter and coconut sugar until the mixture turns light and creamy.
  3. Add the maple syrup, large egg, and vanilla extract to the creamed butter and sugar. Mix until smooth.
  4. Gradually mix in the dry ingredients with the wet until just combined. Then, gently fold in the rolled oats, raisins, and chocolate chips.
  5. Cover the bowl with dough and chill it in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
