How to Make Chewy Oatmeal Raisin Chocolate Chip Cookies
- In a bowl, combine gluten-free all-purpose flour, oat flour, baking soda, and ground cinnamon. Whisk until well blended.
- In a separate bowl, beat together the unsalted butter and coconut sugar until the mixture turns light and creamy.
- Add the maple syrup, large egg, and vanilla extract to the creamed butter and sugar. Mix until smooth.
- Gradually mix in the dry ingredients with the wet until just combined. Then, gently fold in the rolled oats, raisins, and chocolate chips.
- Cover the bowl with dough and chill it in the refrigerator for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a cookie scoop or two tablespoons, drop rounded dough onto the prepared baking sheet.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the bottoms are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
