How to Make Cheesy Scalloped Potatoes
- Preheat your oven to 375°F.
- Slice the potatoes thinly, about 1/8 inch thick.
- Melt the butter in a saucepan over medium heat and sauté the chopped onion for 3-5 minutes.
- Stir in minced garlic and thyme, then whisk in the flour.
- Gradually pour in the heavy cream, stirring until smooth, then season and mix in 2 cups of cheddar cheese.
- Butter a baking dish and layer half of the sliced potatoes, half of the cheese sauce, and 1 cup of cheddar cheese.
- Repeat layers, finishing with remaining potatoes, sauce, and last cup of cheddar.
- Cover with foil and bake for 40 minutes, then uncover and bake for an additional 20 minutes.
- Optional: Sprinkle with chives before serving.
