How to Make Cheesy Scalloped Potatoes
  1. Preheat your oven to 375°F.
  2. Slice the potatoes thinly, about 1/8 inch thick.
  3. Melt the butter in a saucepan over medium heat and sauté the chopped onion for 3-5 minutes.
  4. Stir in minced garlic and thyme, then whisk in the flour.
  5. Gradually pour in the heavy cream, stirring until smooth, then season and mix in 2 cups of cheddar cheese.
  6. Butter a baking dish and layer half of the sliced potatoes, half of the cheese sauce, and 1 cup of cheddar cheese.
  7. Repeat layers, finishing with remaining potatoes, sauce, and last cup of cheddar.
  8. Cover with foil and bake for 40 minutes, then uncover and bake for an additional 20 minutes.
  9. Optional: Sprinkle with chives before serving.
