Preparation
- Preheat your oven to 375°F (190°C) and prepare an 8×8 inch baking dish by greasing it lightly.
- Cook the tortellini in a pot of boiling salted water for 2-3 minutes, then drain well.
- Melt the butter in a saucepan over medium heat. Whisk in flour and cook for about 1 minute.
- Gradually whisk in the milk or half-and-half, cooking until thickened for about 3-4 minutes.
- Add minced garlic, onion powder, Italian seasoning, salt, and pepper, stirring until fragrant.
- Remove from heat and stir in 3/4 cup of mozzarella and all of the Parmesan until melted.
- Combine cooked tortellini, chicken, and spinach in a mixing bowl. Pour the sauce over it and mix.
- Transfer to the prepared baking dish and top with remaining mozzarella.
- Bake for 20–25 minutes until bubbly and golden; broil for 2-3 minutes for a golden crust.
- Let rest for 5 minutes before serving.
