Ingredients
  

For the Bake
  • 9 oz refrigerated cheese tortellini a quick and easy base
  • 1.5 cups cooked chicken breast shredded or cubed
  • 2 cups fresh spinach adds nutrition and color
For the Sauce
  • 2 tablespoons unsalted butter creates a rich sauce
  • 2 tablespoons all-purpose flour thickens the sauce
  • 1.25 cups whole milk or half-and-half for creaminess preference
  • 2 cloves garlic minced for flavor
  • 0.5 teaspoon onion powder enhances flavor
  • Salt to taste
  • Freshly ground black pepper to taste
  • 0.5 teaspoon dried Italian seasoning blends of herbs
For the Topping
  • 1 cup shredded mozzarella cheese melty topping
  • 0.25 cup grated Parmesan cheese adds nutty flavor
  • Pinch red pepper flakes or chopped sun-dried tomatoes optional for heat

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare an 8×8 inch baking dish by greasing it lightly.
  2. Cook the tortellini in a pot of boiling salted water for 2-3 minutes, then drain well.
  3. Melt the butter in a saucepan over medium heat. Whisk in flour and cook for about 1 minute.
  4. Gradually whisk in the milk or half-and-half, cooking until thickened for about 3-4 minutes.
  5. Add minced garlic, onion powder, Italian seasoning, salt, and pepper, stirring until fragrant.
  6. Remove from heat and stir in 3/4 cup of mozzarella and all of the Parmesan until melted.
  7. Combine cooked tortellini, chicken, and spinach in a mixing bowl. Pour the sauce over it and mix.
  8. Transfer to the prepared baking dish and top with remaining mozzarella.
  9. Bake for 20–25 minutes until bubbly and golden; broil for 2-3 minutes for a golden crust.
  10. Let rest for 5 minutes before serving.
