- In a mixing bowl, combine the whipped cream cheese, cheesecake-flavored pudding mix, powdered sugar, milk, and vanilla extract. Mix until smooth.
- Using a knife, cut the tops off each strawberry or halve and hollow them out.
- With a spoon or piping bag, fill each strawberry with the cheesecake mixture.
- Sprinkle crushed graham crackers on top of each filled strawberry.
- Refrigerate the strawberries for at least 30 minutes before serving.
