For the Strawberries
  • 1.5 pounds Fresh strawberries washed and hulled
For the Cheesecake Filling
  • 8 ounces Whipped cream cheese at room temperature
  • 3.4 ounces Cheesecake-flavored instant pudding mix 1 packet
  • 0.75 cup Powdered sugar
  • 0.75 cup Milk helps achieve the right consistency
  • 1 teaspoon Vanilla extract
For the Topping
  • 0.25 cup Graham crackers crushed
  • Shortbread cookies can be substituted for graham crackers

Method
 

Instructions
  1. In a mixing bowl, combine the whipped cream cheese, cheesecake-flavored pudding mix, powdered sugar, milk, and vanilla extract. Mix until smooth.
  2. Using a knife, cut the tops off each strawberry or halve and hollow them out.
  3. With a spoon or piping bag, fill each strawberry with the cheesecake mixture.
  4. Sprinkle crushed graham crackers on top of each filled strawberry.
  5. Refrigerate the strawberries for at least 30 minutes before serving.
