Ingredients
  

Cheese Mixture
  • 1 8-ounce block Cream Cheese softened
  • 4 ounces Mascarpone Cheese
  • 6 ounces Sharp White Cheddar Cheese finely grated
  • Salt to taste
  • Pepper to taste
Coating
  • 3/4 cup Pecans finely chopped
  • 3/4 cup Dried Cranberries chopped
  • 1/2 cup Chives thinly sliced
  • 1/4 cup Parsley finely chopped

Method
 

Preparation
  1. Combine the cream cheese and mascarpone in a large mixing bowl. Use a hand mixer or a spatula to blend them together until smooth and creamy.
  2. Mix in the finely grated sharp white cheddar cheese along with salt and pepper to taste. Stir until all the ingredients are well combined.
  3. Roll small portions of the cheese mixture into bite-sized balls, approximately one inch in diameter.
  4. Prepare your toppings by placing finely chopped pecans, dried cranberries, and the fresh herbs—chives and parsley—on separate plates.
  5. Coat the cheese balls in the toppings by gently rolling them in your choice of pecans, cranberries, or herb mixture.
  6. Chill the coated Cheese Ball Bites in the refrigerator for at least 30 minutes or until you’re ready to serve.
