Preparation
- Combine the cream cheese and mascarpone in a large mixing bowl. Use a hand mixer or a spatula to blend them together until smooth and creamy.
- Mix in the finely grated sharp white cheddar cheese along with salt and pepper to taste. Stir until all the ingredients are well combined.
- Roll small portions of the cheese mixture into bite-sized balls, approximately one inch in diameter.
- Prepare your toppings by placing finely chopped pecans, dried cranberries, and the fresh herbs—chives and parsley—on separate plates.
- Coat the cheese balls in the toppings by gently rolling them in your choice of pecans, cranberries, or herb mixture.
- Chill the coated Cheese Ball Bites in the refrigerator for at least 30 minutes or until you’re ready to serve.
