How to Make Champagne Jello Shots
  1. In a saucepan, combine the champagne, granulated sugar, and fresh lemon juice. Stir gently until the sugar is dissolved.
  2. Sprinkle the unflavored gelatin over the mixture and let it bloom for about 3 minutes.
  3. Warm the mixture gently over low heat, stirring constantly until the gelatin completely dissolves.
  4. Carefully stir in the ginger ale or lemon-lime soda into the mixture.
  5. Pour the mixture into your condiment cups, filling them about three-quarters full. Refrigerate for 2-3 hours.
  6. Sprinkle the tops with star sprinkles just before serving.
