Ingredients
  

For the Base
  • 3/4 cup butter melted
  • 3/4 cup light brown sugar packed
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt divided
For the Caramel Layer
  • 35-40 pieces soft caramel candies unwrapped
  • 1/2 cup heavy cream
For the Topping
  • 1 cup semi-sweet chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter in a mixing bowl, then stir in brown sugar and vanilla extract until smooth.
  3. Combine flour, oats, baking soda, and 1/2 teaspoon of salt into the buttery mixture, stirring until a thick dough forms.
  4. Press half of the dough into the baking pan and bake for 10 minutes.
  5. Melt caramel candies and heavy cream in a saucepan over medium heat, stirring constantly until smooth.
  6. Sprinkle chocolate chips over the baked crust, pour melted caramel on top, and crumble remaining dough over it.
  7. Bake for an additional 15-18 minutes until edges are browned and center is bubbly.
  8. Cool completely for at least 4 hours, then lift from the pan and slice into squares.
