How to Make Cajun Chicken Loaded Fries
- Preheat the oven according to the frozen fries package instructions, usually around 425°F.
- Toss the fries with 1 tablespoon of Cajun seasoning in a large bowl. Spread them evenly on a baking sheet.
- Bake the fries until they are golden brown and crisp, typically about 25-30 minutes.
- Heat a skillet over medium heat and add the extra virgin olive oil. Cook the chicken pieces with the remaining Cajun seasoning until browned, about 5-7 minutes.
- Whisk together the mayonnaise, sour cream, whole milk, hot sauce, and garlic powder in a small bowl.
- Assemble your loaded fries by layering the baked fries with the cooked chicken and both cheeses. Bake again until the cheese is melted and bubbly, about 5-7 minutes.
- Drizzle the creamy sauce generously over the loaded fries, and garnish with chopped chives and extra hot sauce to taste.

Notes
To achieve perfectly crispy fries, spread them in a single layer and avoid overcrowding.
