How to Make Broccoli Cheese Soup
  1. Melt butter in a large pot over medium-high heat, then add diced onion and carrots. Sauté for 4-5 minutes until tender.
  2. Stir in grated garlic and cook for another minute.
  3. Add flour, Dijon mustard, smoked paprika, ground nutmeg, and sprinkle with salt and pepper. Cook for about 1 minute.
  4. Gradually pour in vegetable broth, whisking continuously.
  5. Pour in whole milk and bring to a gentle simmer for about 5 minutes.
  6. Lower heat and mix in broccoli florets, cheddar, and Gruyère cheese. Stir until cheese melts and broccoli is tender, about 5-7 minutes.
  7. Taste and adjust seasoning. Serve hot, optionally garnished with extra cheese or fresh herbs.
