How to Make Broccoli Cheese Soup
- Melt butter in a large pot over medium-high heat, then add diced onion and carrots. Sauté for 4-5 minutes until tender.
- Stir in grated garlic and cook for another minute.
- Add flour, Dijon mustard, smoked paprika, ground nutmeg, and sprinkle with salt and pepper. Cook for about 1 minute.
- Gradually pour in vegetable broth, whisking continuously.
- Pour in whole milk and bring to a gentle simmer for about 5 minutes.
- Lower heat and mix in broccoli florets, cheddar, and Gruyère cheese. Stir until cheese melts and broccoli is tender, about 5-7 minutes.
