Ingredients
  

For the Meat
  • 2 lbs Chuck roast Melt-in-your-mouth tender after slow cooking.
For the Sauce
  • 5 pcs Dried guajillo chiles Soaked in hot water.
  • 4 cloves Fresh garlic Adjust to taste.
  • 1 medium Onion Yellow or white onion preferred.
  • 1 tsp Cumin powder
For the Broth
  • 4 cups Beef broth Homemade or store-bought.
  • 2 pcs Limes Juice of 2 limes.

Method
 

How to Make Birria Tacos
  1. Prepare Chiles: Remove stems and seeds from the dried guajillo chiles, then soak them in hot water for 15 minutes until they soften.
  2. Blend Sauce: Blend the soaked chiles with fresh garlic, chopped onion, cumin powder, 1 cup of beef broth, and lime juice until smooth.
  3. Sear Meat: Heat oil in a large pot over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides until browned.
  4. Simmer Together: Add the blended sauce and remaining beef broth to the pot. Bring to a simmer and cook on low for 3 hours.
  5. Shred Meat: Use two forks to shred the tender meat into bite-sized pieces.
  6. Assemble Tacos: Warm tortillas on a skillet, fill with shredded meat, drizzle sauce on top, and serve.
