Cooking Steps
- Pour the olive oil into a large pot and warm it over medium-high heat.
- Add half of the beef stew meat to the pot, seasoning it with salt and pepper. Sear until browned and set aside.
- In the same pot, toss in the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Return the seared beef to the pot, followed by the tomato paste, Italian seasoning, thyme, bay leaves, soy sauce, Worcestershire sauce, and diced tomatoes. Mix everything together.
- Pour in the beef broth, bring to a boil, then reduce heat and let it simmer uncovered for 45-60 minutes.
- Stir in the uncooked pearled barley, cover the pot, and cook for an additional 30 minutes.
- Remove the bay leaves and thyme stems, adjust seasoning if needed, and serve warm.
- Optional: Garnish with chopped flat-leaf parsley.
