Cooking Steps
  1. Pour the olive oil into a large pot and warm it over medium-high heat.
  2. Add half of the beef stew meat to the pot, seasoning it with salt and pepper. Sear until browned and set aside.
  3. In the same pot, toss in the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  4. Return the seared beef to the pot, followed by the tomato paste, Italian seasoning, thyme, bay leaves, soy sauce, Worcestershire sauce, and diced tomatoes. Mix everything together.
  5. Pour in the beef broth, bring to a boil, then reduce heat and let it simmer uncovered for 45-60 minutes.
  6. Stir in the uncooked pearled barley, cover the pot, and cook for an additional 30 minutes.
  7. Remove the bay leaves and thyme stems, adjust seasoning if needed, and serve warm.
  8. Optional: Garnish with chopped flat-leaf parsley.
