Ingredients
  

For the Chicken
  • 1 tablespoon Olive oil to keep the chicken from sticking
  • 4 pieces Boneless skinless chicken breasts juicy and lean
  • to taste Salt
  • to taste Pepper
For the Apples and Aromatics
  • 2 cups Apples sweet varieties like Fuji or Honeycrisp
  • 1 medium Shallots or onion
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme
For the Sauce
  • 1 cup Low sodium chicken broth
  • 1 cup Apple cider
  • 1 tablespoon Dijon mustard
  • 1/2 cup Heavy cream

Method
 

Cooking Steps
  1. Heat one tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chicken breasts to the skillet and season generously with salt and pepper. Cook for 6-7 minutes per side until golden brown.
  3. Remove the chicken and cover with foil to keep warm. Let it rest.
  4. Wipe the skillet clean, add remaining olive oil, and sauté shallots, apple wedges, rosemary, thyme, salt, and pepper for 7-9 minutes.
  5. Pour in the chicken broth, apple cider, and Dijon mustard. Stir and let simmer.
  6. Stir in the heavy cream and return the chicken to the skillet. Simmer for another 1-2 minutes.
