Cooking Steps
- Heat one tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken breasts to the skillet and season generously with salt and pepper. Cook for 6-7 minutes per side until golden brown.
- Remove the chicken and cover with foil to keep warm. Let it rest.
- Wipe the skillet clean, add remaining olive oil, and sauté shallots, apple wedges, rosemary, thyme, salt, and pepper for 7-9 minutes.
- Pour in the chicken broth, apple cider, and Dijon mustard. Stir and let simmer.
- Stir in the heavy cream and return the chicken to the skillet. Simmer for another 1-2 minutes.
